Grilled lobster and, especially, lobster tail from the grill are probably the finest and most expensive appetizers. The preparation of lobster tail, however, is very straightforward and quite a quick dish to put together. Along with melted spiced butter, this grilled entrée is a truly exquisite and aromatic start to the holidays.

PREPARATION

Grilled lobster tail is one of the greatest indulgences. Feeling fancy? How about hungry? For both, for everyone, for all seafood lovers – lobster tails are definitely a gift from the sea.
For this lobster recipe we used frozen lobster tails – fresh lobster tails have to travel a long way to get to Germany. Each tail weighs about 125 grams and is frozen raw, so we had to do the cooking ourselves.
Fresh or frozen lobster tails?
In a well-stocked supermarket, you can find raw and precooked lobster ready to buy, and, depending on where you live, sometimes you can get them fresh. If you don’t live near the ocean, then fresh lobster is not the best idea – because it can’t really be fresh if it had to travel a long way to get to you.
Raw or precooked frozen lobster tails?
Especially when cooking frozen lobster, we prefer raw lobster for the best grilling outcome. When grilling lobster tail, the grill aromas are present in the meat and make for a great taste. Precooked lobster can quickly become dry and rubbery when cooked too long on the grill.
Otto’s tip: Use raw lobster, either frozen or fresh (if you can really get good fresh lobster in your area) from the fish counter! Raw lobster remains juicy and tender inside.


Lobster Tails
  1. Preparing the lobster tails

    The lobster should thaw overnight in the refrigerator for several reasons: so that it doesn’t affect the temperature of the grill (if it is frozen it will lower the temperature), it is easier to cook, faster to cook and cooks consistently. If you try to grill a frozen piece of meat, the outside cooks much faster than the inside and then you are left with an unevenly cooked, maybe even undercooked, lobster tail. Before you grill the lobster tails, take them out of the fridge about 1 hour before and let them reach room temperature.

  2. Different ways to prepare lobster tails

    Remove the lobster tail from the shell and grill the lobster meat without its protective shell. Slice the lobster tail, revealing the meat and grill it cut side up in its shell. Halve the lobster tail and grill in its shell. In this lobster recipe, we have opted for the second option and grilled the lobster meat with a delicious garlic butter poured into its shell from the slit made.

  3. Grill-ready lobster tails

    Now, take the thawed tails that have been brought to room temperature and remove their little legs. Then, solve the lobster meat from the carcass. To do this, cut up the middle of the tail from base to fin. Carefully, break the shell outwards. Then, remove the intestines of the lobster and leave the meat without removing it from the shell completely – The lobster meat stays on the fins with the carcass connected.

  4. Prepare the garlic herb butter & lime marinade

    Grilled lobster tastes even more fantastic with a homemade marinade of melted garlic butter with a touch of lime. Melt the butter in a small pot on the stove. Then, add finely chopped garlic and the fresh parsley to the butter along with the lime juice. Season with salt and pepper.

 

GRILLING

  1. Grilling on the Otto Grill

    Heat the Otto Grill for about 5-10 minutes prior to grilling. Make sure to take out the grill grate and put it next to your grill before heating so that it stays cooled.

  2. Lobster marinade

    While the Otto Grill heats up, marinate the lobster tails. Take a spoon or brush and spread the melted herb butter all over the lobster meat. The melted butter should run down the sides and stay within the shell to aromatize the crustacean from all sides.

  3. How to grill lobster tail

    Place the lobster tails on the grill grate with the cut side facing upwards and place them in the Otto Grill on Meat-O-Meter level 5. Then, take the temperature up to maximum heat and grill the lobster tails for about 2-3 minutes at 650°C. During the middle of this grilling session, add the melted butter to the lobster meat – around the 1-minute mark. Next, turn off the burner and take the lobster out of the oven. The ideal core temperature for lobsters is around 132-136°F.

 

SERVING

  1. Serving grilled lobster for the holidays

    Arrange the grilled lobster tail on a beautiful appetizer plate and serve with the garlic herb butter and a side of cut limes.
