THE OTTO GRILL

Shakshuka is the up-and-coming national dish from Israel. Usually served as a breakfast this egg-centric dish could also be your meal or dinner. It is quickly assembled, and its spiced flavors can be varied to fit your taste. As expected, it’s best served with your favorite choice of bread.

LET’S GO

PREPARATION

  1. Preheat The Otto grill on high flame with a cast iron skillet directly under the flames for 10 minutes or until the pan is smoking hot.

  2. Peel and dice the onion and garlic. Lower the pan to the lowest setting.

 GRILLING

  1. Add a little cooking oil to the skillet and sauté the onion and garlic until lightly browned.

  2. Add the spices and the cima di rapa and pour the canned tomatoes in. Season with salt and pepper, raise the skillet up again and simmer until the tomatoes have broken down and thickened up a bit.

  3. Lower again and carefully break the eggs in to the tomato sauce. Turn The Otto Grill to Low flame and simmer until the eggs start to brown.

  4. Turn the heat off and leave the skillet sitting in the residual heat for a further 3 minutes.

SERVING

  1. Remove the skillet. Crumble feta and parsley over and serve with crusty bread.
