Grilled Oyster Mushroom Mac & Cheese with Blue Cheese
Ingredients
500g macaroni noodle
300g blue cheese crumbles
300g cheddar cheese, shredded
50g parmesan, microplaned
1 Tbsp ghee (or butter)
1 cup of oyster mushrooms, chopped
Coconut oil
Salt to taste

PREPARATION
Mac & Cheese is the ultimate childhood dish, and now, it’s all grown up – just like you. Cook the Macaroni
Bring a pot of water to boil and then add the macaroni noodles. Cook until just before al dente, about 8 minutes. Taste it. They should be cooked but still have a bite or a spring texture to it because it will continue cooking while grilled.

Cook Mushrooms
At the same time, steam the mushrooms until soft. Then drain them and cook in a bit of olive oil with a teaspoon of salt.

Prepare the Oyster Mushroom Mac and Cheese
Drain the macaroni and add to a buttered loaf or casserole dish. Mix in the cheese and the mushrooms. Top it off with the parmesan cheese, shredded really finely with a microplane.

Heat up the Otto Grill
Take out the grill grate and drip tray and preheat the Otto Grill to the highest heat for 3 minutes.

Grilled Mac & Cheese
When it’s nice and hot, place the mac and cheese dish into the grill (sitting on the bottom).
