Otto’s Grilled Lamb Burger
Ingredients
18 oz. of lamb mince
4 brioche burger buns
2 egg yolks
1 bunch of parsley
7 oz. feta cheese
3½ oz. sundried tomatoes
4 garlic cloves
5 oz. arugula
Sesame seeds
Sweet paprika spice
A pinch of salt

Stack it up with sesame, arugula, feta and dried tomatoes on a brioche bun and it all comes together in a harmonious bite – quite a festive grilled lamb burger if you ask Burger Guru Otto.

PREPARATION

Prep the Patties
For your grilled lamb burger, start by washing the arugula, peel and chop the garlic and cut the feta into small cubes. Pick the leaves off the parsley and separate the egg yolk from the whites. Put the egg yolk into a big bowl together with the minced lamb. Add garlic, feta, parsley, paprika spice, sesame, salt and pepper and mix well.

Homemade Burger Patties
Shape four lamb patties out of the minced lamb mixture. They are easily shaped if you wet your hands in cold water. If the lamb patties start to fall apart, add another egg yolk.
GRILLING

Toast Brioche Burger Buns
Light up the Otto Grill: Preheat your grill to 1500°F for three minutes.Cut the brioche burger buns into halves if they are not already pre-cut and drizzle olive oil on the insides of each half. Set the temperature as low as possible and place the brioche burger buns on the grid at Meat-o-Meter 5. The bread will become super crispy within 20 seconds so make sure to keep an eye on them!

Grill Lamb Patties
Now it’s time for the lamb patties! Set the Meat-O-Meter on level 3 and set the burner to a medium heat. Let the lamb patties become evenly brown and lower the temperature as needed since the sesame seeds burn easily. After about one to two minutes, turn the lamb patties over to grill the other side. After that, the patty will still be lightly pink on the inside – exactly how you’re grilled lamb burger is supposed to be!

Stack up your grilled lamb burgers!
Rub a garlic clove onto the toasted brioche burger buns – this complements the olive oil with a hint of garlic. Then, make a bed of arugula leaves with some dried tomatoes on the lower bun half. Next comes the heart of your grilled lamb burger: the lamb patties. Place the patty over the bed of leaves and top it with feta and more dried tomatoes before closing the burger with the top half of the brioche bun. Stabilize the grilled lamb burger with a wooden skewer and crown it with a small Italian flag of white feta, green arugula and a red dried tomato!
