Grilled Goat Cheese Sandwiches

4 beef burger patties, about 5.5 oz.

4 ciabatta breads

14 oz. goat cheese

4 figs

1 sprig of rosemary

Onion Relish

3 red onions

4 Tbs. brown sugar

4 Tbs. olive oil

1/5 cup balsamic vinegar

2/5 cup red wine

1 tsp. salt

1 tsp. black pepper

Otto’s Grilled Goat Cheese Sandwich




When Otto Wilde Grillers are talking about GOATS, we’re talking about Otto’s Greatest-Of-All-Time sandwich: The Grilled Goat Cheese Sandwhich. A juicy beef burger patty is smothered in grilled goat cheese and caramelized red onions. And we didn’t stop there. To make it an extraordinary grilled cheese sandwich, we gave it a nice Mediterranean flavor by adding fresh figs and crunchy ciabatta bread. That’s what legends are made of!





  1. Prepare the caramelized red onion

    For the Mediterranean grilled goat cheese sandwich, start with the onion relish: cut red onions in rings about 1 cm thick and sauté them lightly in a pan with olive oil. Add brown sugar and let the onions caramelize. To deglaze and make a sauce, pour balsamic vinegar and red wine into the pan and reduce the liquids on a very low heat. Continusouly stir to refrain from burning the sauce. As soon as the onion relish has thickened, take it off the stove.



  1. Grill the beef burger patties

    Light up the Otto Grill: Preheat your grill for three minutes at 1500°F. Then, put the beef burger patties on the grill rack at Meat-o-Meter stage 3. Grill them on high heat for about two minutes on each side until they are crispy brown. Remove them from the grill rack and set the beef burger patties aside.

  2. Prepare the grilled goat cheese

    Otto recommends two methods for grilled goat cheese on the Otto Grill:
    (1) Cut the goat cheese in slices that are a half-inch thick and place them on aluminium foil so that the melted cheese doesn’t drip. Grill them for a short time on low heat until the grilled goat cheese becomes lightly brown and starts to melt. If the slices are too thin, the cheese will melt right away. But it doesn’t matter – just take the melted cheese off the aluminium foil and put it on the ciabatta.
    (2) Place the goat cheese directly on the bottom half ciabatta and grill it to make a crispy crust coating, a process called gratinating. Using this method, the goat cheese slices should be no thicker than 1/5 of an inch so they melt quickly. Otherwise, the bread will burn before the grilled goat cheese melts.
    Next, mince the rosemary and sprinkle it over the grilled goat cheese. If you’d like, you can now lightly toast the upper ciabatta half.



  1. The perfect grilled goat cheese sandwich – put it together!

    Depending on the shape of the ciabatta, you may want to half the beef burger patties. Put the meat on top of the grilled goat cheese ciabatta half. Slice the figs thinly and garnish them over the burger patty. Generously spread onion relish on top or on the top half of the ciabatta. Place the top half of ciabatta over the patty. By inserting two wooden skewers you can make sure that your goat cheese sandwich won’t fall apart.
