Figs with chèvre and chili-chocolate

Ingredients

4 Figs

7 oz Chèvre

4 Tbsp Caster Sugar

1 Red Chili

3.5 oz Dark Chocolate

1/2 cup Cream

1/5 cup Pistachios

Figs with chèvre and chili-chocolate

In many cultures, figs are known as the holy fruit. It's in the bible as the only named fruit in the garden of eden or in greek mythology as the fruit of dionysos. This is a dessert made of sweet figs, salty chèvre and spicy-sweet chili-chocolate ganache, all these aphrodisiac ingredients blend to a dish that will make your evening very special.

PREPARATION

  1. Melt chocolate and cream on low level in a little pot on the stove. Take half of the chili, remove the seeds and cut into thin strips. Mix into the chocolate cream ganache.

 

GRILLING

  1. Discard the stalks and slice the figs crosswise being sure to plunge the knife only half way through the fruit. Place the heat of the Otto Grill on the lowest level. Place the figs on an Otto Drip Tray and grill on Meat-O-Meter level 5 for about 4 minutes. Combine sugar and chèvre and place 1 heaped tablespoon into each opening of the figs.

  2. Grill for another 3 minutes or until desired color. Roast the Pistachios to give them a little color.

 

SERVING

  1. Deseed the rest of the chilis and cut into fine strips. Scoop one tablespoon of the chocolate-chili ganache and plop it on to each plate in order to distribute it randomly on the plate. Place two figs on the plate and garnish with chopped, roasted pistachios and chili strips.
