Classic French Onion Soup
Ingredients
0.5 lb onions
2 garlic cloves
Olive oil
1 tbsp all-purpose flour
25oz beef broth
3oz white wine
2 laurel leaves
2 thyme branches
4oz grated Gruyère cheese
Butter
Pepper
Salt
Muscat
1 baguette

There are few things more comforting than a hot bowl of savory gratinated french onion soup with grilled Gruyère cheese! We have tried cooking this on the Otto Grill and are blown away by the results. Try this and add another staple dish to your winter recipe list. Healthy, hot and humongously delicious.

PREPARATION

Slicing your onions
What more do you need for a classic french onion soup than anything else? Right: lots of onions! Peel your onions and cut in halves. Proceed to cut halves into thin slices of equal thickness. Dice garlic cloves and put aside with other ingredients for now.

Prepare other ingredients
Now slice your baguette into 0.5 -1 inch thick slices. Grate Gruyère cheese with a cheese grater, transfer to a bowl and put aside.

Cook the homemade onion soup
Melt butter in a pot over medium heat. Add sliced onions and stir fry for about 20 minutes until onions turn light brown. Be careful to not overheat and burn! Now add your diced garlic and fry for 2 more minutes. Increase temperature to high, wait for a minute while stirring and add white wine. Bring to a quick boil. Now add your thyme, laurel leaves and beef broth and stir gently. Add salt and pepper and simmer for 20 more minutes.
GRILLING

Heat up your Otto Grill
Heat up your Otto Grill on max temperature for 3-4 minutes and bring your grill grate to Meat-O-Meter level 3.

Time to grill some soup
Pour the homemade onion soup into heat resistant ceramic molds. We recommend mold large enough to hold around 10oz of soup with some head space for bread and cheese. Top up with 1-2 slices of the baguette. Then put a layer of the grated Gruyère cheese on top – add as much cheese as you like!
Carefully place the molds that have been filled with soup, baguette and cheese on your Otto Grill Grate and into the grill on Meat-O-Meter level 5 (low). Reduce heat to medium. Watch the Gruyère cheese melt and form a delicious golden brown crust within just a few minutes. Take your classic french onion soup out and enjoy while hot!
