Ingredients

2 pc apple

1/2 cup almonds

1/4 cup sugar

1/3 cup marzipan

2 pc orange

1 pc cinnemon stick

5 pc cloves

1/4 cup brown sugar

1/3 cup grand marnier

1/2 cup cream

1/2 powdered sugar

2 pc eggyolk

1 tsp vegetable oil

1/4 tsp vanilla extract

What is there to say about this dessert? It is warm, it is sweet and just one bite will put you right in the mood for Christmas. The acid of the orange and the sweetness of the apple are making a killer combination. Crunchy almonds and festive cinnamon notes are complimenting this winter dessert quite perfectly.

PREPARATION

  1. Add the sugar to a pan and caramelize it. As soon as the sugar is fully dissolved and the caramel has turned a nice color, add a spoon full off vegetable oil. Stir a little and add the almonds.
  2. Stir until the almonds have been evenly coated with the caramel.

  3. Remove the almonds from the pan, pour them onto a piece of parchment paper and cool them until they harden up.
  4. Add brown sugar to a saucepan and caramelize it. Deglaze it with Grand Manier. Add the juice of 2 oranges, cloves and cinnamon.
  5. Reduce the liquid down to 2/3, until there is a thick paste, that you can later on brush onto the apple.
  6. Let’s get to the vanilla sauce: Beat egg yolk, cream, powdered sugar and vanilla extract in a bain-marie. Beat until mixture turns into a thick, well-blended vanilla sauce.

 

GRILLING

  1. Add the apple wedges onto a drip tray.
  2. Grill the wedges on low heat on Meat-O-Meter setting #2 for approx. 2 minutes.
  3. Brush the Grand Manier glaze all over and roast wedges for 1 more minute on Meat-O-Meter setting #2 and then remove it.
  4. Break the marzipan into little pieces, sprinkle it on top of the apple wedges and continue grilling them for another minute on Meat-O-Meter setting #2.

 

SERVING

  1. Arrange the glazed apple with marzipan pieces on a serving plate. Take the roasted almonds and chop them up, then sprinkle the pieces over the apples. Splash a little bit of the glaze all over for decoration. In the end, pour the vanilla sauce over it.
